Cold weather calls for good comfort in winter dishes. We just found THE winter dish that includes our two passions: Eating and drinking (and yes we can enjoy drinking even without alcohol!). Here is a recipe for Carbonnade Flamande (beer and beef stew) which, as its name suggests, comes straight from Belgium, the land of beers. We adapted the recipe by changing the alcoholic beer to our Sober Irish Red beer and it was DE-LI-CIOUS! ;)
Irish red Beer Sober Carpenter and beef stew
Make 4 servings
1kg of beef cubes
250g smoked bacon
1 can of Sober Carpenter Irish Red
1 tablespoon of brown sugar
1 tablespoon of vinegar
2 slices of bread with mustard (or gingerbread)
2 bay leaves, salt, and pepper
Mince the onions and brown them in a pot with butter. When the onions are cooked, sprinkle with brown sugar and let caramelize for 2-3 minutes while stirring.
Deglaze with the vinegar, cook for another 2 minutes and save the onions for later.
In the same pot, melt butter and brown the beef cubes floured on all sides as well as the bacon.
Cut the carrots into slices and add them to the meat. Add the onions to the pot with the meat and cover with the beer.
Cut the slices of bread into pieces and spread them with Dijon mustard. Place them in the pot and mix well.
Cover and simmer gently for a good 3 hours.
